  • 3/4 pound chicken breast or thigh sliced thin
  • 2 Tablespoons olive oil
  • 1 Tablespoon lime juice
  • 1 clove garlic finely minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon hot pepper flakes
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 8 8" flour tortillas
  • 1-2 onions sliced thin
  • 2 peppers red, green or yellow

  • 3/4 pound chicken breast or thigh sliced thin
  • 2 Tablespoons olive oil
  • 1 Tablespoon lime juice
  • 1 clove garlic finely minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon hot pepper flakes
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 8 8" flour tortillas
  • 1-2 onions sliced thin
  • 2 peppers red, green or yellow
Instructions
  1. Slice chicken into thin strips
  2. In a medium bowl, mix together 1 Tablespoon olive oil, lime juice, garlic, chili powder, cumin, hot pepper flakes, black pepper and salt. Mix well.
  3. Wrap tortillas in foil and place in 350 degree oven for 5-10 minutes or until heated through.
  4. Cut onions in half lengthwise and slice into strips. Cut peppers into strips.
  5. Heat a large non stick skillet over medium high heat. Add remaining tablespoon of olive oil
  6. Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
  7. Add chicken to the skillet, cook stirring for 3-4 minutes or until cooked through.
  8. Return onions and pepper to skillet; stir for about one minute.
