Meatloaf with a Kick

I have all of the recipes I grew up with.  My mom was a decent cook but not an adventurous one.  Our meals consisted of a lot of casseroles, rich, fat laden comfort food and occasionally steak.  Having to feed a family of eight meant stretching a meal as far as you could.  Casseroles have never graced my table (except for lasagna, and black bean enchiladas) there are some recipes that with the right spices would be quite tasty.

I have often thought I would try to update some of my mom’s recipes but  my husband beat me to it. With my work schedule it often falls to him to make dinner, otherwise we would be eating at 10:00 p.m.  As long as I make the decision he is more than happy to cook.  It was one of these times when meatloaf was on the menu that he changed the menu.

Mom’s Meatloaf

2 cups oatmeal bread crumbs or any bread crumbs

3/4 cup minced onion

2 eggs

2 pounds ground beef

1 Tbs. horseradish

1 tsp. salt

1/4 cup milk

1/4 cup ketchup

Mix ingredients together

Preheat oven to 400 and bake for 40 minutes.  Put ketchup on top and bake for 5 more minutes.  Or bake at 350 for 1-  1 1/2 hours.

3/4  cup of tostado shells, finely crushed

1/8 to 1/4  cup minced onion

1 egg

1 pound lean ground beef

salt and pepper to taste

1 tsp. Italian seasoning, or basil, oregano and thyme

1/4 cup milk

1/4 cup chili sauceIMG_2421

Mix ingredients together and bake 400 degrees for 30-40 minutes.
