Snap Peas and Asparagus Salad

My husband likes asparagus and I like snap peas.  This was the perfect recipe combing both.  The recipe can be found in The Vegetable Butcher: How to Select, Prep, Slice, Dice, and Masterfully Cook Vegetables from Artichokes to Zucchini, page 237.  It includes radishes and a radish vinaigrette dressing.  While I do not like radishes the combination was quite good.  The varying hues of greens and the red of radishes make this salad gorgeous and the flavors delicious.

Ingredients;

Bunch Aspargus, cut into 1 inch pieces
1 tbs. olive
Salt and pepper
1/2 pound snap peas, stem ends removed, cut in half diagonal
2 green onions,thinly clices
3 radishes, thinly sliced
1 avocado, pitted and diced
1/2 cup fresh basil, cut or 2 tsp. dried

1/2 cup feta cheese

Radish Vinaigrette
1 cup radishes
2 tablespoons red wine vinegar
3 tablespoons olive oil
2 teaspoon honey
1/2 teaspoon Dijon mustard
Salt and pepper
